Air Fryer Acorn Squash

Air Fryer Acorn Squash


Servings: 2-3

Total Time: 30 minutes



Ingredients:


  • 1 acorn squash, halved and seeds removed

  • 2 tablespoons olive oil

  • 1 tablespoon brown sugar (optional, for sweetness)

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper



Instructions:


  1. Prepare the Squash:

    • Start by washing the acorn squash thoroughly to remove any dirt.

    • Cut the squash in half vertically and use a spoon to scoop out the seeds and stringy pulp. Be careful with the knife as acorn squash can be tough to cut.

    • Slice each half into evenly sized wedges, about 1-1.5 inches thick. This ensures all the pieces cook evenly.

    • In a large bowl, toss the squash wedges with the olive oil, brown sugar, cinnamon, salt, and pepper until well coated


  2. Air Fry the Squash:

    • Preheat your air fryer to 375°F (190°C) for about 3-4 minutes.

    • Arrange the seasoned squash wedges in a single layer in the air fryer basket. Make sure they are not overlapping, as this allows them to cook more evenly and get a bit of caramelization on each side.

    • Air fry for 20-25 minutes, flipping the wedges halfway through cooking. The squash should be tender when pierced with a fork, and the edges should be slightly caramelized for that perfect balance of soft and crispy.


  3. Serve and Enjoy:

    • Carefully remove the squash from the air fryer using tongs.

    • Serve warm, with an optional drizzle of honey or a sprinkle of extra cinnamon for an added layer of flavor.

Pro Tips:


  • Even Cooking: Cut the squash wedges evenly to ensure that all pieces cook at the same rate. Uneven slices may result in some being overcooked while others are underdone.

  • Sweet or Savory: For a savory version, skip the brown sugar and cinnamon. Instead, season with salt, pepper, garlic powder, and a sprinkle of thyme or rosemary for a herb-infused side.

  • Test for Doneness: The squash should be fork-tender when ready, meaning you should easily be able to pierce it with a fork without resistance. If it’s still firm, cook for a few more minutes.

  • Avoid Overcrowding: To achieve a crispy texture on the edges, make sure not to overcrowd the air fryer basket. If necessary, cook in batches for the best results.

  • Storage and Reheating: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3-4 minutes until warmed through.
