Ingredients:

  • 4 sole fillets (about 4-6 oz each)

  • ½ cup almond flour

  • ½ cup finely chopped almonds (or almond meal)

  • ½ cup panko breadcrumbs

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 large eggs, beaten

  • Cooking spray

  • Lemon wedges, for serving

  • Fresh parsley, for garnish



Instructions:


1. Prepare the Sole:

  • Rinse the sole fillets and pat them dry with paper towels.

  • Season both sides with salt and pepper.


2. Make the Almond Coating:

  • In a shallow dish, combine almond flour, chopped almonds, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.

  • Place the beaten eggs in a separate shallow dish.


3. Coat the Fillets:

  • Dip each fillet into the beaten eggs, ensuring it’s fully coated.

  • Press into the almond mixture, coating both sides evenly. Press gently to ensure the coating sticks.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


5. Cook the Sole:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Arrange the coated fillets in a single layer in the basket, leaving space between each piece.

  • Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through. The coating should be golden and crispy, and the fish should flake easily with a fork.


6. Serve:

  • Transfer the fillets to a serving plate and garnish with fresh parsley.

  • Serve immediately with lemon wedges for squeezing over the fish.
