Ingredients:


For the Flounder:

  • 4 flounder fillets (about 4-6 oz each)

  • ½ cup panko breadcrumbs

  • ½ cup all-purpose flour

  • 2 large eggs, beaten

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon chili powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Cooking spray


For the Tacos:

  • 8 small corn or flour tortillas

  • 1 cup shredded red cabbage

  • ½ cup chopped cilantro

  • Juice of 1 lime


For the Sauce:

  • ½ cup sour cream or Greek yogurt

  • 1 tablespoon lime juice

  • Salt and pepper, to taste



Instructions:

1. Prepare the Flounder:

  • Rinse the flounder fillets and pat them dry thoroughly with paper towels.

  • Cut each fillet into taco-sized strips (about 1 inch wide).


2. Set Up the Coating Stations:

  • Place the flour in a shallow dish.

  • Beat the eggs in a second shallow dish.

  • In a third dish, combine panko breadcrumbs, garlic powder, smoked paprika, chili powder, salt, and black pepper.


3. Coat the Fish:

  • Dredge each strip of flounder in the flour, shaking off the excess.

  • Dip into the beaten eggs, ensuring it’s fully coated.

  • Press into the seasoned breadcrumb mixture, coating both sides evenly.


4. Preheat the Air Fryer:

  • In a medium bowl, toss the shredded cabbage, carrots, cilantro, and lime juice. Season with salt and pepper to taste.


7. Make the Sauce:

  • In a small bowl, whisk together sour cream, lime juice, sriracha (if using), garlic powder, salt, and pepper. Adjust seasoning to taste.


8. Assemble the Tacos:

  • Warm the tortillas in a dry skillet or microwave.

  • Place a few strips of crispy flounder on each tortilla. Top with the cabbage slaw and drizzle with the sauce.


9. Serve:

  • Serve immediately with lime wedges on the side for an extra burst of flavor.
