Air Fryer Kebabs

Ingredients:

  • 1 pound boneless, skinless chicken breast, cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 yellow bell pepper, cut into 1-inch pieces

  • 1 red onion, cut into wedges

  • 1 zucchini, sliced into rounds

  • 3 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper



Instructions:


  1. Prepare the Marinade:

    • In a large bowl, mix together the olive oil, paprika, garlic powder, dried oregano, salt, and black pepper.

    • Add the chicken pieces to the marinade and toss until well coated. Let marinate for at least 15 minutes for best flavor.


  2. Assemble the Kebabs:

    • Preheat your air fryer to 375°F (190°C).

    • Thread the marinated chicken, bell peppers, onion, and zucchini onto skewers, alternating between vegetables and chicken pieces. If using wooden skewers, soak them in water for at least 30 minutes before using.


  3. Air Fry the Kebabs:

    • Place the kebabs in the air fryer basket or rack, ensuring they do not overlap.

    • Air fry for 12-15 minutes, flipping halfway through, until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).


  4. Serve and Enjoy:

    • Remove the kebabs from the air fryer and let cool for a few minutes before serving.

  • Even Cooking: Cut the chicken and vegetables into similar-sized pieces to ensure even cooking.

  • Marinate Longer: For extra flavor, marinate the chicken for up to 2 hours in the fridge.

  • Vegetarian Option: Substitute the chicken with cubed tofu or mushrooms for a vegetarian version.
