Air Fryer Mediterranean Herb Pollock Fillets
Infused with the fresh flavors of the Mediterranean, these air fryer herb-crusted pollock fillets are a light, healthy, and delicious option for any meal. Perfectly air-fried for a crisp yet tender finish.
Ingredients:
4 pollock fillets (about 6 oz each)
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
Lemon wedges, for serving
Fresh parsley or dill, for garnish
Instructions:
1. Prepare the Pollock:
Rinse the pollock fillets and pat them dry thoroughly with paper towels.
Lightly season each fillet with a pinch of salt and pepper.
2. Make the Herb Marinade:
In a small bowl, mix olive oil, lemon juice, garlic powder, oregano, basil, thyme, paprika, salt, and black pepper. Stir until well combined.
3. Marinate the Fillets:
Brush the herb mixture generously over both sides of the pollock fillets.
Let the fillets marinate for 10-15 minutes to absorb the flavors.
4. Preheat the Air Fryer:
Preheat your air fryer to 375°F (190°C) for 3-5 minutes. This ensures even cooking and a crispy finish.
5. Cook the Pollock:
Lightly spray the air fryer basket with cooking spray or line it with parchment paper.
Arrange the marinated fillets in a single layer in the basket, leaving space between each piece.
Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through. The fillets should be golden brown and flake easily with a fork.
6. Serve:
Remove the pollock from the air fryer and transfer to a serving plate.
Garnish with fresh parsley or dill and serve with lemon wedges for squeezing over the fish.
Pro Tips for Success:
Fresh Herbs: Use fresh oregano, basil, and thyme if available for a more aromatic flavor.
Don’t Overcook: Pollock cooks quickly, so check for doneness at the 10-minute mark.
Customize the Flavor: Add a pinch of red pepper flakes for a spicy kick or more lemon juice for a tangier taste.
Serving Suggestions:
This Mediterranean-inspired dish pairs beautifully with:
Vegetables: Grilled zucchini, roasted bell peppers, or a Greek salad with olives and feta.
Grains: Lemon herb couscous, quinoa, or orzo pasta.
Sauces: A dollop of tzatziki or a drizzle of olive oil and balsamic vinegar.
