Bright, healthy, and infused with classic Mediterranean flavors, this trout dish features juicy cherry tomatoes, briny olives, and aromatic herbs. The air fryer brings out the natural flavors while keeping the trout tender and flaky.



Ingredients:


For the Trout:

  • 4 trout fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper


For the Mediterranean Topping:

  • 1 cup cherry tomatoes, halved

  • ½ cup Kalamata olives, pitted and sliced

  • 2 tablespoons capers, rinsed and drained

  • 2 tablespoons red onion, finely chopped

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon olive oil

  • 1 tablespoon fresh lemon juice



Instructions:


1. Prepare the Trout:

  • Rinse the trout fillets and pat them dry thoroughly with paper towels.

  • Brush both sides of the fillets with olive oil.

  • In a small bowl, mix garlic powder, oregano, paprika, salt, and black pepper. Sprinkle this seasoning evenly over the fillets.


2. Prepare the Mediterranean Topping:

  • In a medium bowl, combine cherry tomatoes, olives, capers, red onion, parsley, olive oil, and lemon juice. Toss to mix.


3. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


4. Cook the Trout:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Place the trout fillets skin-side down in a single layer in the basket. Cook in batches if necessary.

  • Air fry at 375°F (190°C) for 8-10 minutes, until the fish is tender and flakes easily with a fork.


5. Top with Mediterranean Mixture:

  • In the last 2 minutes of cooking, spoon the Mediterranean topping over each fillet in the air fryer to warm the ingredients slightly.


6. Serve:

  • Transfer the trout to a serving plate. Drizzle with any remaining juices from the Mediterranean topping. Serve immediately.
