Air Fryer Sole Piccata


Light, zesty, and full of classic Italian flavors, this Air Fryer Sole Piccata is a healthy twist on a traditional favorite. The tender sole fillets are paired with a bright lemon-caper sauce for a delicious and elegant dish.


Ingredients:


For the Sole:

  • 4 sole fillets (about 4-6 oz each)

  • ½ cup all-purpose flour

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 large egg, beaten

  • ½ cup panko breadcrumbs

  • 1 teaspoon lemon zest

  • Cooking spray


For the Piccata Sauce:

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 2 tablespoons capers, rinsed and drained

  • ½ cup chicken broth (or vegetable broth)

  • Juice of 1 lemon

  • 1 tablespoon fresh parsley, chopped



Instructions:


1. Prepare the Sole:

  • Rinse the sole fillets and pat them dry thoroughly with paper towels.

  • Season both sides with salt and pepper.


2. Set Up the Coating Stations:

  • In a shallow dish, mix the flour with garlic powder.

  • Place the beaten egg in a second dish.

  • Combine the panko breadcrumbs with lemon zest in a third dish.


3. Coat the Sole Fillets:

  • Dredge each fillet in the flour mixture, shaking off the excess.

  • Dip into the beaten egg, ensuring it’s fully coated.

  • Press into the panko mixture, coating both sides evenly.


4. Preheat the Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.


5. Cook the Sole:

  • Lightly spray the air fryer basket with cooking spray to prevent sticking.

  • Place the breaded fillets in a single layer, leaving space between each piece.

  • Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through. The fish should be golden brown and flaky.


6. Make the Piccata Sauce:

  • While the fish cooks, heat butter and olive oil in a small skillet over medium heat.

  • Add the capers and cook for 1 minute.

  • Stir in the chicken broth and lemon juice, simmering for 2-3 minutes until slightly reduced.

  • Stir in parsley and remove from heat.


7. Serve:

  • Place the cooked sole fillets on a serving plate and spoon the piccata sauce over the top.

  • Garnish with additional parsley and serve with lemon wedges.
